Kebabs on a foil-lined baking sheet

A Mediterranean-style marinade for chicken kebabs. The first time I made kebabs—and the first time I used a large grill—I somehow improvised this with what I had, and it ended up beyond delicious.

Prep time: 5 minutes
Yield: Enough marinade for about a pound of chicken


  • 100mL tahini, give or take for texture
  • 1⅓T lemon juice
  • 2T olive oil, give or take for texture
  • 5–7 cloves of garlic, finely minced
  • 3T ground paprika
  • 2t freshly ground black pepper
  • 1t ground cumin
  • 1t ground chipotle pepper
  • Large pinch monosodium glutamate
  • Large pinch salt
  • Pinch ground coriander
  • Pinch dried thyme leaves
  • Pinch ground allspice


Mix together everything but the lemon juice and olive oil. Mix in the lemon juice (the marinade will become very thick!), then the olive oil. Use immediately.
